In September 2018 Ellis was named to the Hobart Hurricanes squad for the 2018 Abu Dhabi T20 Trophy. On 5 October 2018 he made his Twenty20 debut for the Hobart Hurricanes in his 2018 Abu Dhabi T20 Trophy and on 23 September 2019 he made his One Day Marsh 2019–20 in his Cup List A for Tasmania. made his debut. He made his first-class debut in his 2019–20 Sheffield Shield his season on 24 February 2020 in Tasmania. In June 2021, Ellis traveled to Australia for the Twenty20 International (T20I) series to face Bangladesh. He was named a reserve. Ellis made his T20I debut for Australia on 6 August 2021 against Bangladesh. In the match, Ellis scored a hat-trick, becoming the first cricketer to score a hat-trick on his debut in a T20I match. Later that same month, Ellis was named one of his three injured guards to represent Australia in his Cup at the 2021 ICC Men’s T20 Worlds.
